Häsi Bread Is Coming to Market Mama

What Is Häsi Bread?

Häsi, pronounced “hay-zee,” is a Los Angeles artisan bakery founded by Matias Barang.

The bakery began as a small cottage operation and grew through Los Angeles farmers markets, word of mouth and a loyal following that recognized there was something very different about these loaves.

Today, Häsi is known across Los Angeles for its naturally fermented sourdough, house-milled grains and signature yellow-and-blue marbling created with heirloom turmeric and butterfly pea flower.

The Original loaf is the one that started it all.

What Makes the Häsi Original Different?

Häsi Original is made with:

  • Organic wheat flour
  • An organic house-milled blend of rye, spelt and khorasan wheat
  • Water
  • Organic butterfly pea flower
  • Ancient sea salt
  • Organic heirloom turmeric

The yellow and blue swirls are not artificial food coloring.

The golden color comes from turmeric, while butterfly pea flower creates soft blue and violet tones throughout the crumb.

The loaf is wild fermented and made with a blend of grains that brings more flavor and character than a standard white sourdough.

The crust is deeply browned and blistered. The inside is airy, chewy and lightly tangy, with a nutty depth from the rye, spelt and khorasan.

Is Next-Day Sourdough Still Good?

Very.

Proper artisan sourdough is made to hold.

The crust may soften slightly overnight, but a quick toast brings it right back to life. The crumb remains chewy, flavorful and ideal for eggs, sandwiches, tartines or a thick layer of butter.

For longer storage, slice the loaf and freeze it. Individual slices can go directly from the freezer into the toaster.

A Holistic Nutritionist’s Look at Sourdough

The way bread is made matters.

Traditional sourdough fermentation gives naturally occurring yeasts and lactic acid bacteria time to work on the dough.

We are not asking Häsi to overproduce just so we can advertise unlimited stock.

We are creating a home for excellent bread that has already been made.
