ONE OVEN, NO PANIC

how to time it all

Wednesday, when your box arrives: squash, potatoes, onion, garlic and pears stay on the counter. Everything else goes in the fridge. Then get ahead: cube the squash, trim the Brussels sprouts and green beans, cook the onion and celery for the stuffing, toast the sesame seeds and walnuts, and seed the pomegranate. Leave the pears whole for now.

Thursday morning: roast the squash at 400°F and crisp the sage. Dice and caramelize the pears (done the same day, they stay golden and firm), mix the stuffing and bake it at 375°F. Then the oven belongs to the turkey.

While the turkey rests: turn the oven up to 450°F for the Brussels sprouts and roasted or smashed potatoes. Mashing? Do those on the stove. Blister the green beans, then slide the squash and stuffing back in for the last few minutes to rewarm.

At the table: warm the honey, stir in the sesame seeds and pour it over the stuffing. Crumble the crispy sage over the squash, dress the salad and set out the berries.

Market Size, serves 3 to 4. Stuffing, saffron butter squash, maple Brussels sprouts, potatoes your way and berries. $110, or $95 without the stuffing mix.

Full Market Size, serves 6 to 8. Everything in the Market Size with double the potatoes and Brussels sprouts, plus garlic green beans and an arugula pomegranate salad with farm fresh walnuts. $160, or $145 without the stuffing mix.

Already have a family stuffing recipe? Choose Without Stuffing Mix and you'll still get the pears, celery, onion, eggs and herbs to make it your way. (Though we'd keep the bag either way. It makes great croutons.)

GOOD TO KNOW

before you order

How many people does it serve?

The Market Size serves 3 to 4. The Full Market Size serves 6 to 8. Either way, the stuffing alone serves 8 to 10, so there's plenty for Friday.

When will my box arrive?

Wednesday, November 25, the day before Thanksgiving. Order by Sunday, November 22 at 9 PM.

How is this different from ordering a prepared Thanksgiving dinner?

Prepared meals are cooked days ahead and reheated. We bring the freshest farmers market ingredients and the recipes, so everything comes out of your oven the day of. It tastes like you made it, because you did.

Where do you deliver?
What do I need from my own kitchen?

Butter, olive oil, salt and pepper, broth, sesame seeds, ground cinnamon, maple syrup and, if you like, saffron. For the Full Market salad, a lemon or red wine vinegar.

Do I have to make all the stuffing at once?

No. Bake half the bag for dinner and save the rest as croutons for soups and salads. The recipe has the half-bag amounts.

Will my box look exactly like the photo?

Varieties follow what's at its best that week, so your pears or berries might look a little different. Every box has everything the recipes call for.

Is it vegetarian?

Yes, if you make the stuffing with vegetable broth. It contains eggs and wheat.

Can I send it as a gift?

Yes. Send it to whoever's hosting this year and add a note card on the product page.
